Type: Full-bodied red wine
Winemaking:
Soil: Limestone areas rich in clay and stones.
Harvest: Manual between August and September.
Vinification: Grapes are carefully selected on the sorting table. A very gentle crushing and destemming of the clusters is followed by the first fermentations, in temperature controlled stainless steel vats, using the vineyard’s native yeast.
Aging: 15 months in French and partially American oak barrels.
Tasting Notes:
Color: Dark plum red.
Nose: Aromas of black currant, sour black cherries, plum, dark chocolate, oak (vanilla), licorice.
Palate: Fresh acidity, excellent concentration, very firm, ripe and ample tannins, and great length.
Food pairing: Meat sauce pastas and roasted meats.
