Soil: Limestone areas rich in clay and stones.
Harvest: Manual, in mid-September.
Vinification: Selection of the grapes on the sorting table. Gentle crushing and destemming of the grapes is followed by fermentation in temperature controlled stainless vats. Maceration lasts about 12-15. Malolactic fermentation takes place in steel vats.
Aging: In French oak barrels (30% new) for 24 months before the bottling phase and the following aging time in bottle before its commerce release.
Color: Deep ruby red.
Nose: Elegant, complex aromas of red fruit.
Palate: Rich and dense, with sweet, balanced tannins. Long finish with depth and structure.
Food pairing: Red meats, pasta.
