Vinification: Gentle de-stemming and pressing. Pre-fermentative maceration for a few days. Alcoholic fermentation in tanks.
Aging: In French oak barrels for 22 months, with weekly battonages.
Tasting Notes:
Color: Black cherry color, clean and shiny, high layer.
Nose: Aromas of ripe berries, redcurrants, blackberries, violet flowers and fennel, with a complex background of sweet spices, laurel, black olive, licorice, cedar, incense, tobacco leaf, and cocoa powder.
Palate: Powerful with a great structure and balance, mineral, with a pleasant acidity and creamy tannins. Long finish with notes of ripe black fruits and licorice.
Food pairing: Roasts and spicy stews. Grilled meats. Smoked and cured cheeses.
