Winemaking:
The wines are gently pressed in a bladder press using a champagne cycle. Wines are settled and then racked into barrels for native yeast and malolactic fermentation (75% completed ML).
Aging for 9 months in French oak of which 25% was new, with minimal bâtonnage. Cavin, Francois Freres, Dargaud and Jaegle barrels.
Tasting Notes:
Color: Bright golden yellow.
Nose: Aromas of orchard fruits showing both apple and pear but also hints of tropical fruits and vanilla bean.
Palate: Moderate weight. Extraordinary depth of flavor, echoing the aroma with Fuji apple, Meyer lemon, sage, and vanilla panna cotta. The finish is all energy with mouthwatering citrus notes.
