Type: Full-bodied white wine
Harvest: Mid August - Beginning of September.
Vinification: Grapes are harvested at night in small batches as they reached perfect maturity. The fruit, cool from the evening temperatures, is pressed directly into tank using whole cluster pressing. The juice is transferred into French oak barrels to ferment.
Aging: In order to achieve maximum fruit expression, the wine is aged on primary yeast lees for eight months with intermittent stirring of the lees to enhance texture and boost complexity. 100% Barrel fermented/13% Malolactic.
Color: Medium straw to yellow color.
Nose: Aromas of lemon zest, citrus curd, Asian pears and crushed stones along with nuances of honey and fresh white flowers.
Palate: Round texture with a core of citrus flavors that are underlined by a lovely mineral character. The finish is clean with a nice zing and lingering minerality intertwined with pear and apple lemon.
Food pairing: Pork, rich fish (salmon, tuna, etc), vegetarian, poultry.
