Harvest: Manual harvest in the early morning to maximize the concentration of aromas.
Fermentation: At 12-15 °C in oak barrels.
Aging: For 6 months in new French and American white oak barrels.
Color: Golden yellow.
Nose: Great aromatic intensity. Aromas of ripe and dehydrated fruit. Hints of white flowers and nuts.
Palate: A wine with a great sensation of creaminess. Persistent and elegant finish.
Food pairing: Duck, chiles en nogada, beef mollejas, smoked marlin tacos, paella, grilled trout and fish.
Serving temperature: 10-12 °C
