Type: Full-bodied red wine
Vinification: Ripe grapes are destemmed and inoculated with various strains of yeast to maximize complexity. Gentle pump-overs during fermentation are used to extract color and flavor and produce soft, supple tannins.
Aging: 14 months in American and French oak, 32% new.
Color: Deep ruby red.
Nose: Aromas of blackberries, cedar, tobacco, and spices.
Palate: Well balanced, flavors of coffee, ripe raspberry and cherry, smooth tannins.
Food pairing: Blue cheese, beef, veal, dark chocolate.
