Type: Medium-bodied red wine
Vinification: Ripe grapes are destemmed and inoculated with various strains of yeast to maximize complexity. Gentle pump-overs during fermentation are used to extract color and flavor and produce soft, supple tannins.
Aging: 18 months in French and American oak, 33% new.
Color: Deep ruby red.
Nose: Aromas of black cherry, leather, and spice.
Palate: Dark red fruit flavors and a long, smooth, sweet finish.
Food pairing: Beef, lamb, grilled salmon, hearty pasta.
