Soil: Clay, limestone, and silica.
Average vine age: 25 to 35 years.
Vinification: Grapes are transported in wagons and then sorted at the winery. Pressing with "à la champenoise" method. Clarification with controlled temperature and "pulpaire" maceration.
Aging: In stainless vats thermostatically regulated for six to eight weeks. On lees for three to six months.
Color: Pale gold with green and silver reflections.
Nose: First aromas of orange peel and lemon, then white peach and pear, followed by honey and peppermint notes.
Palate: Creamy and fresh with a hint of grapefruits. Stony minerality finish.
Food pairing: Goat cheese, pork, salads, and seafood.
