Type: Medium-bodied red wine
Soil: Molasse from the Miocene sitting on a thick layer of clay with high stone content, and covered by the pebble blanket of Alpine diluvium generally known as “galets roulés”.
Vine age: 70 years on average.
Vinification: Grapes are hand-picked. Gentle pressing and selective destemming.
Fermentation: 30-40 days’ traditional fermentation in temperature–controlled stainless-steel and wooden vats. Pneumatic pressing, then systematic malolactic fermentation.
Ageing: 20-22 months in French oak foudres (60hl). Bottled unfined and unfiltered, then released at 2 years.
Color: Violet with an intense layer.
Nose: Aromas of blackberry, cherry, raspberry, clove, pepper, toast, seeds, and minerals.
Palate: A full-bodied, intense wine with spicy flavors, balanced and velvety, confirming fruit, spice and fine wood flavors.
Food pairing: Game, lamb, pork, matured cheeses, spicy dishes.
Serving temperature: 17°C
