Elaboration: First yolk musts from our best payments, static cold decantation and fermentation at 22ºC, early delio, classification for fineness, fortification at 15º with the best wine distillates to obtain the traditional sobretables, transition to the Criaderas and Solera de our solerajes of fines in biological aging, due to circumstances and occasionally, boots appear that do not march in the desired direction for the intended thin, these are the ones that will be cut with one or two jug of alcohol and will form the base of our Palo Cortado soleraje, staying in it for at least 12 years until reaching the hearth.
Tasting note: Color wine between old gold. Very sharp and intense aroma, complex with light nuts and hazelnut. On the palate it is dry, silky, very balanced acidity, full-bodied and a very elegant and persistent character on the palate, tremendously expressive aftertaste.
