Encinillas - La Casona
Grapes: Cabernet sauvignon, Merlot
Region: Mexico / Chihuahua / Encinillas
Type: Red wine blend
Vinification practices are those traditionally used in great wines, looking for an optimal extraction of color and above all of aromas and flavors. After the fermentation process has finished, the wine is left to rest and mature in French oak barrels for a period of 13 months or more. Finally, after bottling, the wine is kept for another 10 months before delivering it to the market, so that maturation is complete.
Color: Intense red color and pronounced violet tones.
Nose: Aromas of ripe red fruits with hints of spices such as pepper and vanilla, which reflect the complex interaction between what a red grape harvested at its optimum time provides and a prolonged stay in new oak barrels.
Palate: On the palate, the pleasant fruit flavors reaffirm the aromas perceived in the nose. The wine is full-bodied and balanced, leaving the well-ripened tannins with a long finish and a smooth, velvety finish.
Food pairing: Beef, lamb, game (deer, venison), spicy food, poultry.
