Type: Light-bodied white wine
The grapes that give rise to this wine come from the vineyard of "Valle Hermoso", located at only 12 km from the Pacific Ocean.
Soil: Highly decomposed granitic matrix with presence of micas, with texture without aggregation in depth, where the roots can grow without problems.
Harvest: At the end of March, looking for the precise point of maturity for each barracks and clonal selection.
Vinification: In the cellar the grapes are destemmed and macerate for an average of 6-8 hours at low temperature, and then pressed under inert gas, in order to avoid the contact of the must with the oxygen and to conserve the aromatic precursors intact. The alcoholic fermentation is carried out in low temperature in stainless steel tanks of different sizes.
Color: Very pale yellow wine with shades of turquoise green.
Nose: Highlights a complex and delicate blend of ripe citrus and tropical fruit such as mango, papaya and grapefruit peel, mixed with herbal notes.
Palate: Fresh, concentrated and sparkling, fruity, persists the minerality in the finish, saline.
Food pairing: Raw seafood, especially oysters, fresh salads, also fish prepared in cebiche, carpaccio, sushi or cooked with light sauces; goat cheese, blue cheese, etc.
Serving temperature: 10-12 º C.
