“Fleurs de Prairie” translates as “wildflowers,” celebrating the beautiful fields of wisteria, lavender, poppy, and sunflowers carpeting Provence. The wine is sourced from select Provençal vineyards that dot the coastal wind-swept hillsides of the region. The Mediterranean combination of sun, wind, mild water stress, and ocean influence provide ideal conditions for grapes to ripen to the perfect balance of flavor and freshness.
Winemaking:
Harvest: The grapes are picked at the peak of ripeness during the early morning hours to preserve maximum fruit expression.
Vinification: The fruit is then immediately crushed and sent to tank to chill prior to yeast inoculation. The wines are fermented slowly over 2 weeks at around 55˚F. Throughout the winemaking process the wines are kept in a near zero oxygen environment to preserve the color and intense fruit aromas.
Tasting Notes:
Color: Pale salmon color
Nose: Notes of strawberry, white flowers, and a little herbal scent.
Palate: Delicate flavors of strawberry, rose petals, and herbs. Its bright, refreshing acidity makes it a perfect companion with a meal or as an aperitif.
