Nose: Intense, herbaceous, with notes of vanilla and menthol.
Mouth: Balanced, with good attack, ripe tannic structure, good persistence and a long finish.
12 months aging in new French oak barrels.
Typical cuisine: Manchego cheese in a thyme crust, rib tacos. Everyday cooking: Chamorros with fragrant herbs (laurel). Haute cuisine: Old-fashioned beef stew (thyme).
