Vineyards: Located in Fuenmayor, Cenicero, Tudelilla.
Soil: Nutrient-poor soil, covered with boulders.
Harvest: The plots are picked in mid-October and transported in refrigerated trucks to the winery.
Vinification: Alcoholic fermentation takes place naturally, at controlled temperatures.
Aging: Tempranillo: In barrels for 36 months with six manual rackings in American oak barrels averaging 4 years in age. Garnacha: For 30 months with five manual rackings in American oak barrels with two and three wines.
Color: Medium-intensity, dark cherry-red; clean and bright.
Nose: Fresh, spicy character, with hints of sweet cherries, blackcurrant, chocolate.
Palate: Tasty, with a soft freshness, nice structure, and delicately elegant tannins. Silky finish, with a lovely aftertaste, where liqueur-like notes of cherries and blackcurrants intermingle with toasty notes and sweet spices.
Food pairing: Red meat, roast lamb, game, seasoned fish stews, tuna, and swordfish, smoked and ripened cheese.
