Type: Full-bodied red wine
Handpicked grapes are sorted, lightly crushed and fermented in small stainless-steel tanks. Then, at the peak of fermentation, the cap is pumped over aggressively to enhance color and structure. As fermentation nears completion, pump overs are handled more gently to further extract color and flavor without imparting harsh tannins. The finished wine is aged 22 months in French oak barrels, 90% new.
Color: Intense dark red.
Nose: Generous blackberry aromas and a hint of sage and an appealing earthiness and oak spice.
Palate: Rich and expressive on the mid-palate, the tannins are firm, yet refined. The result is a multi-layered mouthfeel with dark fruit flavors that linger across a long, satisfying finish.
Food pairing: Beef, lamb, game (deer, venison), poultry.
