Vineyards: Located in Nathan Coombs Estate, State Lane, and Flat Rock.
Harvest: Hand-harvested fruit, picked at night when the berries are cool.
Vinification: Following a five-day maceration, the wine is fermented by native yeast in open-top stainless steel tanks. It goes through spontaneous malolactic fermentation after being racked to barrels.
Aging: 20 months maturation in French and American oak (61% new).
Color: Deep crimson.
Nose: Aromas of red currant, boysenberry, cedar, and herbes de Provence.
Palate: Layers of cassis, graphite, blueberry, and sage. Seamless, velvety tannins frame a long, elegant finish.
Food pairing: Beef, lamb, mature and hard cheese, poultry.
