Sonoma County is one of the most diverse wine growing regions in the world. As with most of California, climate is influenced by the distance and exposure to the cold Pacific Ocean — areas near the water are cool, areas inland are warm. Sonoma also boasts incredibly complex soils ranging from volcanic along the Mayacamas Mountains to marine-based in all of the coastal locales.
Grapes are hand-picked and whole-cluster pressed, and then racked roughly half of the juice into barrels for primary and malolactic fermentations. The remainder of the fruit is tank fermented at cooler temperatures to preserve the bright fruit and firm structure. After fermentations, the wine is aged sur lie French, Hungarian, and American oak barrels (30% new). After aging for 8 months, the wine is bottled.
Color: Bright and completely clear golden color.
Nose: Aromas of baked apple, baking spices and a hint of cinnamon greet the nose.
Palate: Nice palate weight warm inviting & rounded with flavour profile of grilled nuts attractive smokey light toasted oak with soft round acidity on the finish which is long lived.
Food pairing: Pork, rich fish (salmon, tuna etc), vegetarian, poultry.
