Soils: Calcareous clay composition.
Vineyards average age: Older than 30 years.
Vinification: Traditional elaboration, 100 % de-stemmed. Malolactic fermentation in oak.
Aging: 24 months in French oak Bordelaise barrels (60%) and American oak Bordelaise barrels (40%), 30% new oak and 70% maximum 3-wines barrels.
Color: Bright ruby red.
Nose: Expressive aromas of redcurrant, cherry, licorice.
Palate: Juicy in the mouth, with red fruit flavors mixed with toasty vanilla and underlying mineral notes. Penetrating acidity extends the long, spicy, floral-dominated finish.
Food pairing: Acorn-fed Iberian ham, feathered game, red meats with sauce and stews.
