Delicate peach blossoms, candied pears, and honeydew melon draw the nose into heavenly notes of white pineapple, Georgia peach, and grapefruit. Acid lift and bright focus drive through the midpalate with finesse, tying together this bright collection of fruit with spirit, ease, and grace.
The grapes are first picked over three passes. Next, the whole cluster fruit is lightly pressed to preserve freshness and fruit aromatics. The resulting Sauvignon Blanc is then fermented first in terracotta amphora, and finally aged in seasoned French oak and acacia barrels, and a small stainless steel tank. The wine rests on the lees for four months, with weekly battonage
